I’ve been experimenting with the concept of a healthy cookie. A little bit of an oxymoron don’t you think? I have made two versions, and both are vegan! The first is an almond joy cookie. Take one banana, mashed, A cup of peanut butter A cup of uncooked oats 1 scoop whey protein. (I used chocolate) Mix in chocolate chips and shredded coconut as desired! Yum The next kind is a raisin banana cookie which used all natural coconut sugar to sweeten. 2 mashed bananas 1 cup oats 1/2 cup flour Coconut sugar as desired Agave as desired Raisins Cinnamon A dash of canola oil Both can be baked at 350 for about 15 mins. There you go, a healthy cookie.
