Antique Shopping in Fairbanks 

Navarone and I had breakfast at the Bakery Resturaunt, Alaskan blueberry pancakes and a reindeer sausage skillet. After our weekly Sunday morning breakfast, I wanted to visit downtown Fairbanks. Quiche

Tillamok Habanero Cheese Quiche!

To make crust: http://allrecipes.com/recipe/easy-pie-crust/

Saute green bell peppers, mushrooms, onions and broccoli in a pan.

Slice tomatoes and shred cheese.

Whisk together milk and 4 eggs.

Pour the tomatoes and cheese into the egg mixture.

Add the sauteed veggies. Pour the filling into the crust.

Bake at 350 for 35 mins. Add slices of cheese and bake until the top is firm and no longer jiggles. 

Healthy Banana Coconut Muffins

I needed something healthy and quick to eat in the mornings, and I had some old bananas and coconut, I found my perfect solution!

I used coconut sugar and a tablespoon of molasses instead of brown sugar,

I also used apple juice instead of OJ, and blueberry yogurt instead of plain- yummy! 

Christmas Pastry

Cherry Turnovers made with Puff Pastry. Super easy, homemade tarts. Just take one box of  puff pastry, and one can cherry pie filling. Roll the pastry dough out, and cut it into squares, then fill, and fold and seal with a fork, glaze the dough with and egg white and bake! Another option is pinwheels, which you can cut the square pastry dough at the corners, and fold. I like to top with a butter glaze, made with powder sugar on the stove top.
